  • ½ cup vegetable oil (or unsalted butter)
  • ½ cup brown sugar
  • ¼ cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 ⅓ cups mashed ripe bananas (about 4 small bananas)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour an 8×4-inch loaf pan.
  2. Mash the bananas until you have about 1 ⅓ cups of smooth puree; set aside.
  3. In a bowl, whisk together flour, baking soda, salt, and cinnamon.
  4. Cream softened oil with brown and granulated sugars using a hand mixer until fluffy.
  5. Add eggs one at a time and mix well after each addition; then stir in vanilla and mashed bananas.
  6. Gradually add the dry ingredients to the wet mixture, mixing gently until just combined.
  7. Pour the batter into the prepared loaf pan and bake for approximately 45 to 60 minutes or until a toothpick comes out clean from the center.
  8. Cool in the pan for about 5 minutes before transferring to a wire rack to cool completely.
