  • 1.5 lbs boneless, skinless chicken breasts
  • 1 cup long grain white rice
  • 2 1/4 cups chicken broth
  • 1/2 cup heavy cream
  • 4 cloves garlic
  • 3 tbsp butter
  • Cajun seasoning
  • lemon zest
  • Parmesan cheese

Instructions

  1. Season the chicken with salt, pepper, Cajun seasoning, and smoked paprika. Sear in a large skillet with olive oil and butter until golden brown. Set aside.
  2. In the same skillet, sauté minced garlic in remaining butter until fragrant.
  3. Add uncooked rice; toast for 1-2 minutes in the garlicky mixture.
  4. Pour in chicken broth and lemon juice; bring to a boil then simmer covered for 15-18 minutes until rice is tender.
  5. Stir in heavy cream, lemon zest, Parmesan cheese, and Italian seasoning; simmer for an additional few minutes.
  6. Return the chicken to the pan, combine well and heat through before serving.
  7. Garnish with chopped parsley before serving hot.
