  • 1 ½ lb skinless boneless chicken thighs or breasts
  • 2 slices uncooked turkey bacon (chopped)
  • 1 ½ cup sliced white mushrooms
  • 1 tbsp avocado oil or olive oil
  • ½ tsp sea salt (divided)
  • ⅛ tsp black pepper
  • 1 tbsp butter
  • 2 garlic cloves (minced)
  • 1 tsp dried thyme leaves
  • ⅓ cup chicken broth
  • 3 ounces cream cheese (softened)

Instructions

  1. Season chicken with ¼ tsp salt and ⅛ tsp pepper. In a large skillet over medium-high heat, sear chicken in oil for about 5 to 7 minutes on each side until browned.
  2. Remove the chicken and set aside. In the same skillet, cook the chopped turkey bacon until slightly browned.
  3. Add butter, then sauté garlic and mushrooms until browned.
  4. Pour in chicken broth, add thyme and remaining salt, stir well, then bring to a simmer.
  5. Incorporate cream cheese gradually until melted and sauce thickens.
  6. Return the chicken to the skillet; cover and simmer for an additional 5 to 8 minutes until cooked through.
