  • 10 tablespoons cold unsalted butter
  • 45 tablespoons ice-cold water
  • 2 medium peaches, sliced
  • 1 plum, sliced
  • ½ cup blueberries
  • 1 ½ tablespoons coconut sugar (or brown sugar)
  • 1 large egg (for egg wash)
  • Optional: almond meal and honey

Instructions

  1. Prepare the dough by mixing flour and salt in a food processor. Add butter until crumbly. Gradually add cold water until it forms a dough ball.
  2. Chill the dough for at least one hour.
  3. While chilling, prepare the filling by combining sliced fruits with coconut sugar.
  4. Preheat the oven to 375°F (190°C) and roll out the chilled dough into a circle on parchment paper.
  5. Assemble the galette by spreading almond meal (if using) on the dough, adding the fruit mixture, and folding up the edges.
  6. Brush with an egg wash and sprinkle almonds before baking for about 50–55 minutes until golden brown.
