  • 1/4 cup chopped pecans
  • 1 1/2 cups very hot water

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, combine 1 cup + 3 tablespoons flour, 2 teaspoons baking powder, 1/2 teaspoon salt, 3/4 cup granulated sugar, and spices (1 teaspoon cinnamon, 1/2 teaspoon nutmeg, 1/2 teaspoon cloves).
  3. In another bowl, mix together 1/2 cup pumpkin puree, 1/4 cup milk, 1/4 cup melted butter or vegetable oil, and 1 1/2 teaspoons vanilla.
  4. Combine wet ingredients with dry ingredients until mixed well; pour into an 8-inch casserole dish.
  5. For the topping, mix together 1/2 cup granulated sugar, 1/2 cup brown sugar, and 1/4 cup chopped pecans; sprinkle over batter.
  6. Carefully pour 1 1/2 cups very hot water over the entire dish without stirring.
  7. Bake for about 40 minutes until set; let cool for 5–10 minutes before serving.
