  • 110 grams coconut oil
  • 170 grams pumpkin puree
  • 1 tablespoon maple syrup (optional)
  • 1/2 teaspoon vanilla extract
  • 200 grams all-purpose flour
  • 2 teaspoons baking powder
  • 3 teaspoons pumpkin spice
  • 100 grams powdered sugar
  • 2 tablespoons milk (approx.)
  • 2 tablespoons maple syrup

Instructions

  1. Preheat your oven to 175°C (350°F). Grease a springform pan (20-22 cm) and dust with flour.
  2. In a mixing bowl, beat the eggs and sugar until light and fluffy. Gradually add the coconut oil, pumpkin puree, and optional maple syrup, mixing well.
  3. In another bowl, combine the flour, baking powder, and pumpkin spice. Gently fold into the wet ingredients until just combined.
  4. Pour the batter into the prepared pan and bake for about 45 minutes or until a toothpick inserted comes out clean.
  5. Allow the cake to cool before glazing with a mixture of powdered sugar, milk, and maple syrup.
