  • 1 tbsp olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 2 stalks celery, chopped
  • 1 large carrot, diced
  • 4 cups vegetable broth
  • 1 cup quinoa, rinsed
  • 2 cups fresh or frozen corn kernels
  • 1 can (14.5 oz) coconut milk
  • 1 tsp smoked paprika
  • 1/2 tsp dried thyme
  • Salt and pepper, to taste
  • 2 tbsp chopped fresh parsley

Instructions

  1. Heat olive oil in a large pot over medium heat. Add chopped onion, garlic, celery, and carrot. Sauté for 5 minutes until tender.
  2. Pour in vegetable broth and bring to a boil. Stir in rinsed quinoa.
  3. Reduce heat to low once boiling and add corn kernels and coconut milk. Simmer for 15-20 minutes until quinoa is cooked through.
  4. Season with smoked paprika, dried thyme, salt, and pepper to taste.
  5. Serve warm, garnished with fresh parsley.
