  • 6 tablespoons unsalted butter (melted)
  • 2 teaspoons unflavored vegan gelatin powder
  • 2 tablespoons cold water
  • 1 ½ cups heavy cream (cold)
  • 1 cup confectioners' sugar
  • 12 ounces frozen raspberries (thawed)

Instructions

  1. Prepare the crust by mixing graham cracker crumbs with melted butter and pressing into a 9-inch pie dish. Refrigerate to set.
  2. Soften gelatin in cold water for about 5 minutes, then heat until dissolved.
  3. Whip cold heavy cream, gradually adding confectioners' sugar until stiff peaks form. Gently fold in thawed raspberries and dissolved gelatin.
  4. Pour the raspberry mixture into the chilled crust and smooth out. Cover and refrigerate for at least 6 hours or overnight until set.
  5. Once set, slice and serve with optional homemade whipped cream and fresh raspberries as garnish.
