  • 1 cup milk
  • 1/2 cup sour cream or plain yogurt

  • 8 oz cream cheese (cold)
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 pint heavy whipping cream (cold)

Instructions

  1. Preheat oven to 350°F and line cupcake pans with liners.
  2. In a large mixing bowl, sift the red velvet cake mix. Add eggs, oil, milk, sour cream (or yogurt), and vanilla extract. Mix until smooth.
  3. Fill each cupcake liner three-quarters full with batter and bake for 15-20 minutes until a toothpick comes out clean.
  4. Let cupcakes cool completely before frosting.
  5. For the whipped cream topping, beat cream cheese and powdered sugar until smooth. Add vanilla extract, then gradually pour in heavy whipping cream while beating until stiff peaks form.
  6. Pipe the whipped cream onto cooled cupcakes and decorate with fresh blueberries.
