  • 4 cups all-purpose flour
  • 1 tablespoon baking powder
  • ¼ teaspoon salt
  • 3 cups sugar
  • 6 large eggs
  • 1 tablespoon pure vanilla extract
  • 1½ cups milk
  • 23 tablespoons strawberry puree
  • 23 tablespoons blueberry puree
  • A few drops of red gel food coloring
  • A few drops of blue gel food coloring
  • 3 ½ sticks unsalted butter, softened
  • 3 cups sifted confectioners’ sugar
  • 3 tablespoons milk
  • 1 tablespoon vanilla extract
  • 1 teaspoon pure vanilla extract
  • Pinch of salt
  • 2 tablespoons fresh parsley, finely chopped

Instructions

  1. Preheat the oven to 350°F and prepare four 8-inch cake pans with butter and parchment.
  2. Whisk together flour, baking powder, and salt; set aside.
  3. Cream together butter and sugar until fluffy. Add eggs one at a time followed by vanilla.
  4. Gradually mix in the dry ingredients alternating with milk until just combined.
  5. Divide batter into portions, color two red (strawberry) and one blue (blueberry), leaving one uncolored.
  6. Pour into prepared pans and bake for 30–35 minutes or until golden brown.
  7. Cool cakes completely before leveling tops and frosting.
