  • 1 cup vanilla wafer cookie crumbs
  • 2 tbsp sugar
  • 4 tbsp butter, melted
  • 12 ounces cream cheese, room temperature
  • 1/2 cup sugar
  • 3 tbsp flour
  • 1/2 cup sour cream
  • 1 1/2 tsp vanilla extract
  • 2 eggs
  • Red and blue gel icing color
  • 1/2 cup heavy whipping cream, cold
  • 5 tbsp powdered sugar

Instructions

  1. Preheat the oven to 325°F (162°C) and line a cupcake pan with cupcake liners.
  2. In a bowl, combine the cookie crumbs, sugar, and melted butter; mix well. Divide evenly among liners and press into bottoms.
  3. Bake crusts for about 5 minutes; let cool.
  4. Reduce oven temperature to 300°F (148°C). In a large bowl, beat cream cheese, sugar, and flour until smooth.
  5. Mix in sour cream and vanilla until combined; add eggs one at a time.
  6. Divide batter into three bowls: color one red, one blue, and leave one white.
  7. Layer batters in crusts: white on bottom, followed by red then blue.
  8. Bake for 18–20 minutes; cool gradually in the oven with the door slightly open.
  9. Once cooled completely, whip heavy cream with powdered sugar and vanilla; pipe onto cheesecakes.
