  • 3/4 cup granulated sugar
  • 1 tsp vanilla extract
  • 1 pinch kosher salt
  • 1 pinch cream of tartar
  • red gel food coloring
  • blue gel food coloring

Instructions

  1. Preheat your oven to 200°F (93°C) and line two baking sheets with parchment paper.
  2. In a metal bowl over simmering water, combine egg whites, sugar, vanilla extract, kosher salt, and cream of tartar until the mixture is clear.
  3. Transfer the bowl to a stand mixer and whip on medium-high for about 7 minutes until glossy stiff peaks form.
  4. Brush red and blue gel food coloring on opposite sides of a piping bag; fill it with meringue.
  5. Pipe desired shapes onto the baking sheets and bake for 1.5 hours until dry.
  6. Cool completely on a wire rack before serving.
