  • 12 large baking potatoes (washed and cubed)
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 7 oz block of feta cheese
  • 1 head of garlic (top sliced off)
  • 1 lemon (quartered)
  • 1 tablespoon honey
  • ¼ cup fresh basil (chopped)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a mixing bowl, combine cubed potatoes with 1 tablespoon olive oil, thyme, oregano, salt, and black pepper. Toss until evenly coated.
  3. Spread seasoned potatoes on one side of a baking sheet. Place feta cheese and garlic on the other side.
  4. Nestle quartered lemon around the feta and drizzle everything with remaining olive oil and honey.
  5. Roast in the oven for about 50 minutes or until potatoes are golden brown and tender, stirring halfway through.
  6. Remove from the oven and sprinkle fresh basil over everything before serving warm.
