  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 carrot, peeled and diced
  • 1 celery stalk, diced
  • 1 tablespoon tomato paste
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon rosemary
  • Salt and pepper to taste
  • 1/2 cup beef broth
  • 1/2 cup frozen peas
  • Sweet potatoes (for topping)

Instructions

  1. In a skillet over medium heat, heat olive oil. Sauté diced onion until translucent. Add garlic, carrot, celery, salt, and pepper; cook until softened.
  2. Stir in tomato paste, thyme, rosemary, and broth. Simmer for about 5 minutes.
  3. Add frozen peas and mix well; simmer another 5 minutes before removing from heat.
  4. Boil peeled sweet potatoes until tender; drain and mash with olive oil or butter (optional), salt, and pepper until creamy.
  5. Preheat oven to 400°F (200°C). Spread lamb filling in a baking dish and top with sweet potato mash.
  6. Bake for 20-25 minutes until the top is golden.
