  • 2 tablespoons honey
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 small onion, sliced
  • 2 tablespoons cornstarch
  • 2 tablespoons water

Instructions

  1. Place the chicken at the bottom of the slow cooker.
  2. In a bowl, whisk together sweet chili sauce, soy sauce, rice vinegar, honey, garlic, and ginger until combined.
  3. Layer the sliced bell peppers and onion on top of the chicken.
  4. Pour the sauce over everything, ensuring even coverage. Cover and cook on low for 6–7 hours or on high for 3–4 hours.
  5. About 30 minutes before serving, mix cornstarch with water to create a slurry. Stir into the slow cooker to thicken the sauce.
  6. Serve over cooked rice and garnish with green onions and sesame seeds.
