  • 2 1/4 cups graham cracker crumbs
  • 5 tbsp sugar (for crust)
  • 10 tbsp unsalted butter, melted
  • 24 oz cream cheese
  • 1 cup sugar (for filling)
  • 3/4 cup cocoa powder
  • 1 cup sour cream
  • 4 large eggs
  • Mini marshmallows and chocolate chips for toppings

Instructions

  1. Preheat your oven to 325°F (160°C). In a bowl, combine graham cracker crumbs, sugar, and salt. Mix in melted butter until crumbly.
  2. Press the mixture into the bottom of a springform pan and bake for about 10 minutes until golden brown.
  3. Beat cream cheese in a large bowl until smooth. Gradually add sugar and cocoa powder until combined.
  4. Mix in sour cream and vanilla extract, then add eggs one at a time until just incorporated.
  5. Pour the filling into the cooled crust and bake for about 2 hours until set in the center.
  6. Cool in the oven with the door ajar for an hour, then refrigerate until fully chilled.
  7. For toppings, melt mini marshmallows and chocolate chips with heavy cream; spread over cheesecake.
  8. Top with large marshmallows and toast lightly using a kitchen torch or broiler.
