  • 16 oz penne pasta
  • 1 lb boneless skinless chicken breasts
  • 2 tbsp taco seasoning
  • 2 tbsp extra-virgin olive oil
  • 1 small onion
  • 3 cloves garlic
  • 15 oz black beans
  • 15 oz corn
  • 10 oz Rotel diced tomatoes with green chilies
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • Optional: chopped fresh cilantro for garnish

Instructions

  1. Cook the penne pasta according to package directions, drain without rinsing.
  2. Cut chicken into bite-sized pieces and coat with taco seasoning.
  3. In a large skillet, heat 1 tbsp olive oil over medium-high heat and cook chicken until it reaches 165°F. Transfer to a plate.
  4. Add remaining olive oil to the skillet; sauté onions until softened, then add minced garlic.
  5. Stir in black beans, corn, Rotel tomatoes, heavy cream, and cheddar cheese; simmer until cheese melts.
  6. Mix cooked pasta and chicken back into the skillet; heat through for another few minutes. Garnish with cilantro before serving.
