  • 1 pound ground beef
  • 1 cup breadcrumbs
  • 2 large eggs
  • 1 tablespoon olive oil
  • 1 tablespoon parsley flakes
  • 2 teaspoons garlic powder
  • 2 teaspoons onion powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 8 ounces sliced provolone cheese
  • 2.25 ounces canned sliced black olives
  • 16 ounces dried spaghetti
  • 16 ounces marinara sauce

Instructions

  1. Preheat the oven to 400°F and line a baking sheet with foil or parchment.
  2. In a mixing bowl, combine ground beef, breadcrumbs, eggs, olive oil, parsley flakes, garlic powder, onion powder, salt, and black pepper; mix well.
  3. Roll the mixture into 2-inch balls and place them on the prepared baking sheet.
  4. Bake for 18-20 minutes until golden brown.
  5. Cut provolone cheese into circles and place one circle on each meatball after they come out of the oven.
  6. Top each provolone circle with a slice of black olive as an 'eyeball pupil.'
  7. Return to the oven for an additional 2-3 minutes until melted.
  8. Cook spaghetti according to package instructions; heat marinara sauce over low heat.
  9. Combine spaghetti with marinara sauce and serve topped with eyeball meatballs.
