  • 2 Tbsp lemon juice (freshly squeezed)

  • 1/4 tsp salt
  • 1 1/2 tsp baking powder
  • 1 C all purpose flour
  • 6 Tbsp sour cream
  • 1 batch lemon curd
  • 1 C unsalted butter (softened)
  • 1/2 tsp vanilla extract
  • 1/3 C strawberry jam
  • 1/2 tsp strawberry extract
  • 1 drop red gel food color
  • 2 1/2 C powdered sugar
  • Fresh strawberries (for topping)

Instructions

  1. Prepare lemon curd ahead of time and chill.
  2. Preheat oven to 350°F and line a cupcake pan with liners.
  3. Cream together softened butter and sugar until fluffy; mix in egg, lemon zest, lemon juice, and vanilla.
  4. Combine dry ingredients, alternating flour and sour cream until just mixed.
  5. Fill cupcake liners 2/3 full with batter and bake for 18-20 minutes or until a toothpick comes out clean.
  6. Cool completely before filling with chilled lemon curd.
  7. Prepare frosting by mixing softened butter, strawberry jam, strawberry extract, vanilla, and powdered sugar; frost cooled cupcakes generously.
  8. Garnish each cupcake with a fresh strawberry before serving.
