  • 1 batch 15-Minute Puff Pastry
  • 1 egg yolk
  • 1/3 cup cream cheese
  • 1 Tbsp fresh lime juice
  • 4 Tbsp fine turbinado sugar
  • 3 peaches or nectarines
  • Handfuls of strawberries, raspberries, blackberries, and blueberries
  • Fresh mint leaves for garnish

Instructions

  1. Preheat oven to 350°F (180°C).
  2. Roll out puff pastry into a rectangle on parchment paper-lined baking sheet; create a border by bending edges down.
  3. Whisk egg yolk with water and brush the mixture onto the edges of the pastry.
  4. Poke holes in the center with a fork to prevent puffing.
  5. Place beans in the middle to weigh down the dough while baking; bake for 20 minutes until golden brown.
  6. Cool completely on a wire rack.
  7. In a mixing bowl, whisk cream cheese, lime juice, and turbinado sugar until smooth.
  8. Spread the cream cheese mixture over the cooled crust.
  9. Layer sliced peaches and assorted berries on top.
  10. Garnish with fresh mint leaves before serving.
