  • avocado, sliced
  • avocado, halved
  • 1 cup cherry tomatoes, halved
  • 1 cup cooked or canned corn, drained
  • 1 cup fresh parsley or arugula
  • 1 tsp sesame seeds
  • 1 tsp olive oil
  • Salt & pepper to taste

Instructions

  1. In a small nonstick pan, heat a touch of olive oil over medium heat. Crack in the egg and cook sunny-side-up until the white is set but the yolk remains runny.
  2. In a mixing bowl, artfully arrange halved avocado, sliced avocado, cherry tomatoes, corn, and fresh parsley or arugula.
  3. Place the fried egg in the center of the bowl. Drizzle olive oil over the halved avocado and sprinkle sesame seeds over the sliced one.
  4. Season with salt and pepper to taste before serving immediately.
