  • 2 Sweet Potatoes (1 pound each), quartered
  • 1 Large Tart Apple, peeled and cored
  • 2 Tablespoons Olive Oil
  • 1 Onion, chopped
  • 2 Stalks Celery, chopped
  • 1 Large Carrot, chopped
  • 5 Cups Chicken Broth
  • 1 Cup Cream
  • Zest and juice of 1 Lemon
  • Salt and Pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Spread quartered sweet potatoes and chopped apple on a greased baking sheet. Roast for about 40 minutes until tender.
  3. In a large soup pot, heat olive oil over medium heat. Sauté onion, celery, carrot, and bay leaf until softened.
  4. Remove the bay leaf. Add roasted sweet potatoes and apples along with chicken broth to the pot.
  5. Blend until smooth using an immersion blender or regular blender.
  6. Stir in cream, lemon zest, and juice; season with salt and pepper.
  7. Gently warm the soup without boiling before serving.
