1 medium sweet potato, peeled and diced
1/2 avocado, sliced
1/2 cup cottage cheese
1 tsp olive oil
Salt to taste
Pepper to taste
Paprika to taste
Garlic powder to taste
1 tsp hot honey or chili honey
Instructions
Preheat your oven to 400°F (200°C). Toss diced sweet potatoes with olive oil, paprika, garlic powder, salt, and pepper in a mixing bowl. Spread on a baking sheet in a single layer and roast for about 25 minutes until golden and soft.
In a skillet over medium heat, cook the ground beef until browned and crispy. Season with salt and pepper.
In a bowl, layer roasted sweet potatoes first, then add cooked ground beef on top. Follow with sliced avocado and cottage cheese.
