  • 6 ears of fresh corn (husks removed, kernels cut off the cob, approximately 45 cups)
  • 1 tablespoon vegetable oil
  • 2 tablespoons mayo
  • 1/4 cup thinly sliced green onions
  • 1 jalapeño pepper (seeded, stemmed, finely chopped, optional)
  • 1/2 cup chopped fresh cilantro leaves
  • Juice from one medium lime
  • 2 ounces cotija cheese (or use queso fresco or feta)
  • 1 teaspoon chili powder (adjust to taste)
  • Salt to taste
  • 2 tablespoons fresh parsley, finely chopped

Instructions

  1. Remove husks from the corn and cut kernels off each ear.
  2. Heat vegetable oil in a cast iron skillet over medium heat.
  3. Add corn kernels and cook for about 5 minutes until slightly charred.
  4. In a mixing bowl, combine mayonnaise, green onions, jalapeño (if using), cilantro, lime juice, cotija cheese, chili powder, and salt.
  5. Stir well and mix with the cooked corn until evenly coated.
  6. Serve warm and garnish with chopped parsley.
