  • 2 cans (29 oz each) peaches in heavy syrup (only juice from one can)
  • 1/4 cup granulated sugar
  • 5 tbsp unsalted butter (melted)
  • 2 1/2 tsp lemon juice
  • 2 tsp vanilla extract
  • 2 cups flour
  • 2 tsp baking powder
  • 1 1/2 cups granulated sugar (for topping)
  • Pinch of nutmeg
  • 1 tsp cinnamon
  • 1 cup unsalted butter (melted for topping)

Instructions

  1. Preheat oven to 400°F.
  2. Pour one can of peaches and its juice into a 9×13 pan; drain the second can and add only the peaches.
  3. Combine melted butter, salt, lemon juice, sugar, and vanilla with the peaches; mix well.
  4. In a large bowl, mix flour, sugar, baking powder, cinnamon, nutmeg, and salt. Spread over the peach mixture.
  5. Drizzle melted butter on top and bake for 15 minutes at 400°F; lower to 375°F and bake for an additional hour until golden brown.
