  • 1/4 cup oat flour

  • 1/3 cup melted refined coconut oil
  • 1/4 cup pure maple syrup
  • 1 tsp vanilla extract
  • 1 cup berries, fresh or frozen
  • 1 1/2 tbsp pure maple syrup
  • 1 tbsp water
  • 1/2 tsp cornstarch
  • 1/2 cup oat flour
  • 1/4 cup oats
  • 2 tbsp almond flour
  • 1/4 cup melted refined coconut oil
  • 1 tbsp pure maple syrup
  • 1/2 tsp vanilla extract
  • pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare the base layer by mixing almond flour, oat flour, and salt; then add melted coconut oil, maple syrup, and vanilla extract. Press into an 8×8 baking dish.
  3. For the berry filling, combine berries, maple syrup, and water in a pot; heat until softened and mash slightly. Stir in cornstarch and let simmer until thickened.
  4. Create the crumble topping by mixing oats, oat flour, almond flour, melted coconut oil, maple syrup, vanilla extract, and salt until crumbly.
  5. Spread the berry filling over the base layer and top with crumble mixture.
  6. Bake for 25 minutes until lightly golden.
  7. Cool completely before cutting into squares.
