  • 1 large onion, diced
  • 3 large carrots, chopped
  • 2 ribs celery, diced
  • 5 cloves garlic, minced
  • 9 oz vegan beef or portobello mushrooms
  • 4 cups vegetable stock
  • 1 medium rutabaga, cut into chunks
  • 4 large potatoes, chopped
  • ¼ head green cabbage, shredded
  • Seasonings: sea salt, black pepper, sugar, bay leaves, thyme, rosemary

Instructions

  1. Heat oil in a large Dutch oven over high heat.
  2. Sear vegan beef or mushrooms until golden brown. Remove and set aside.
  3. Lower heat to medium; add onion, carrots, and celery. Cook until softened.
  4. Stir in garlic; cook briefly until fragrant.
  5. Add flour to coat vegetables; stir for about a minute.
  6. Gradually pour in vegetable stock while stirring to avoid lumps.
  7. Mix in rutabaga, potatoes, cabbage, soy sauce, and seasonings.
  8. Bring to a boil then reduce heat; simmer uncovered until potatoes are tender (about 45-50 minutes).
  9. Return seared protein to the pot ten minutes before serving.
  10. Serve hot with optional fresh herbs as garnish.
