  • 68 cups cubed watermelon
  • 2 cups arugula
  • 1 heaping cup chopped fresh basil
  • 1/2 large red onion, thinly sliced
  • 2/3 cup feta cheese
  • 1/4 cup pine nuts
  • Flaky sea salt and freshly cracked black pepper
  • 1/4 cup olive oil
  • 2 Tbsp red apple vinegar
  • 2 Tbsp freshly squeezed lemon juice
  • 12 Tbsp honey
  • 1 Tbsp Dijon mustard

Instructions

  1. Prepare the ingredients by cutting the watermelon into cubes, slicing the red onion, and chopping the basil.
  2. In a large mixing bowl, combine cubed watermelon, arugula, chopped basil, sliced red onion, feta cheese, and pine nuts. Gently mix until well combined.
  3. For the dressing, whisk together olive oil, red apple vinegar, lemon juice, honey, Dijon mustard, salt, and pepper in a mason jar or bowl until emulsified.
  4. Drizzle the dressing over the salad just before serving and toss gently to coat all ingredients.
