  • 1 tbsp olive oil

  1. Dice all fresh ingredients: watermelon, cucumbers, red and yellow bell peppers, poblano pepper, and scallions. Mince the mint and cilantro.
  2. In a large mixing bowl, combine all the diced ingredients along with the minced herbs.
  3. Sprinkle in salt and sugar, then drizzle lime juice and olive oil over the mixture.
  4. Gently mix everything until well combined.
