  • 1 large red onion
  • 2 cloves garlic
  • ¾ cup all-purpose flour
  • 2 teaspoons baking powder

Instructions

  1. Grate zucchini and toss with salt in a colander. Let it sit for 10 minutes to drain excess moisture.
  2. Squeeze the grated zucchini to remove water.
  3. In a mixing bowl, beat the egg and combine with drained zucchini, onion, garlic, flour, baking powder, salt, pepper, and optional feta.
  4. Heat olive oil in a skillet over medium-high heat. Drop spoonfuls of batter into the skillet and flatten gently.
  5. Cook for 3–4 minutes on each side until golden brown. Drain on paper towels before serving.
