  • 1 bell pepper (chopped)
  • 1 yellow onion (chopped)
  • 4 cloves garlic (minced)
  • 1 tablespoon olive oil
  • 2 eggs
  • 1 lb ground turkey
  • 2 cups marinara sauce
  • 2 cups mozzarella cheese (shredded)
  • 1/4 cup Parmesan cheese (grated)
  • Italian seasoning, black pepper, onion powder

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Grate zucchini and drain excess moisture using a colander.
  3. In a bowl, mix drained zucchini with eggs, Parmesan cheese, black pepper, onion powder, and Italian seasoning.
  4. Press the mixture into a greased 9×13 baking pan and bake for about 20 minutes until set.
  5. In a skillet, heat olive oil and sauté onion and bell pepper until soft; add garlic and ground turkey until browned; stir in marinara sauce.
  6. Spread turkey sauce over the baked zucchini crust and top with mozzarella cheese.
  7. Bake for an additional 20 minutes until cheese is bubbly.
