  • 12 cups grated zucchini
  • 2 cups diced onion
  • 1 green pepper (chopped)
  • 1 red pepper (chopped)
  • 34 jalapeño peppers (diced)
  • 12 cups fresh tomatoes (chopped)
  • 1½ cups brown sugar (light)
  • 2 cups white vinegar
  • Spices: cumin, turmeric, garlic powder, black pepper, mustard seeds

Instructions

  1. Grate the zucchini and optionally sprinkle with pickling salt; refrigerate overnight to reduce moisture.
  2. Drain and rinse the zucchini thoroughly.
  3. Dice onions, tomatoes, and peppers to your liking.
  4. In a large stock pot over medium-high heat, combine grated zucchini, tomatoes, onions, and peppers.
  5. Mix in spices and vinegar; bring to a boil.
  6. Reduce heat and simmer for about 45 minutes to an hour until desired consistency is reached.
  7. Ladle hot salsa into sterilized jars; seal tightly.
  8. Process in a water bath canner for 15 minutes (pints) or 20 minutes (quarts).
