  • 150 g unsalted butter (melted)
  • 3 tart apples (peeled and sliced)
  • 690 g cream cheese (softened)
  • 75 g granulated sugar
  • 100 g Greek yogurt
  • 3 large eggs
  • 55 g unsalted butter (melted)
  • 50 g all-purpose flour
  • 50 g brown sugar
  • 20 g rolled oats
  • 50 g brown sugar
  • 1 teaspoon ground cinnamon
  • 2 teaspoons cornstarch
  • 2 teaspoons vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg

Instructions

  1. Preheat the oven to 175°C (350°F). Crush biscoff cookies and mix with melted butter; press into a springform pan.
  2. Toss sliced apples with brown sugar, cinnamon, and cornstarch in a bowl; set aside.
  3. Beat softened cream cheese and granulated sugar until smooth. Mix in Greek yogurt, vanilla extract, spices, and incorporate eggs one at a time.
  4. Layer half of the cheesecake filling over the crust, then add the apple filling before topping with the remaining batter.
  5. Prepare streusel by mixing melted butter, flour, brown sugar, and oats; sprinkle over the cheesecake.
  6. Bake for about 85 minutes until set but slightly jiggly; cool in the oven for 30 minutes before refrigerating for at least four hours.
