  • 5 tablespoons unsalted butter
  • 1/2 cup unsweetened cocoa powder
  • 1 large egg
  • 1/2 teaspoon vanilla extract
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • Dash of salt
  • 1 cup white chocolate chips
  • ½ cup cold butter
  • 1/3 cup + 2 tablespoons white sugar
  • ½ cup brown sugar
  • 1 large egg
  • Optional: ½ teaspoon vanilla extract
  • 1½ cups all-purpose flour
  • Heaping ¼ teaspoon baking soda
  • Heaping ¼ teaspoon salt
  • 1 cup semi-sweet chocolate chips + optional mini chocolate chips

Instructions

  1. Preheat your oven to 350ºF.
  2. For the brownie layer, mix granulated sugar, butter, and cocoa powder until combined. Add egg and vanilla; mix well. Stir in flour, baking powder, and salt until just combined, then fold in white chocolate chips.
  3. For the cookie layer, cream cold butter with white and brown sugars until fluffy. Beat in an egg (and vanilla). Add flour, baking soda, and salt; mix until just combined, then stir in chocolate chips.
  4. In a greased baking pan, spread the brownie mixture evenly on the bottom. Layer the cookie mixture over it gently using a spatula.
  5. Bake for approximately 25 minutes or until set. Allow cooling before slicing into bars.
