  • 1 1/4 lb gold potatoes, peeled & thinly sliced
  • 1 1/4 lb zucchini squash, thinly sliced
  • 1 large red onion, thinly sliced
  • 4 garlic cloves, minced
  • 1/2 cup fresh parsley, chopped
  • 28 oz canned diced tomatoes (no-salt added)
  • Extra virgin olive oil
  • Dried oregano & rosemary
  • Salt & pepper

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large mixing bowl, combine sliced potatoes, zucchini, salt, pepper, oregano, rosemary, parsley, minced garlic, and olive oil. Toss until well coated.
  3. Pour half of the diced tomatoes into an oven-safe pan. Layer the seasoned vegetables on top.
  4. Drizzle any remaining olive oil mixture over the veggies and top with the remaining tomatoes.
  5. Cover the pan with foil and bake for 45 minutes.
  6. Remove the foil and bake uncovered for another 30-40 minutes until vegetables are tender and slightly charred.
  7. Serve warm or at room temperature.
