  • 4 pounds potatoes (about 8 large)
  • 12 hard-boiled eggs
  • 1 1/2 cups mayonnaise
  • 1/4 cup mustard
  • 2 tablespoons white vinegar
  • 2 tablespoons dill relish
  • Salt & pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Boil potatoes in a large pot until tender, about 15 minutes. Drain and chill. Peel and cube once cooled.
  2. Slice hard-boiled eggs in half; separate yolks from whites. Mash yolks and mix with mayonnaise, mustard, and vinegar until creamy.
  3. Fold in dill relish, chopped egg whites, and diced potatoes. Mix gently to combine.
