  • 1 lb ground venison (or choice of ground meat)
  • 4 ribs celery (diced)
  • 1 cup diced bell pepper
  • ½ cup diced onion
  • 3 cloves garlic (minced)
  • ¾ tsp paprika
  • ¼ tsp dried oregano
  • ¼ tsp dried thyme
  • ¼ tsp cayenne pepper
  • 1½ tsp salt (divided)
  • 1 tsp garlic powder (divided)
  • ¼ tsp black pepper
  • ¼ cup chicken stock or water
  • 12 oz frozen cauliflower rice
  • Fresh parsley (for garnish)

Instructions

  1. Preheat a heavy-bottomed skillet over medium-high heat. Add the oil and ground meat seasoned with salt, pepper, and garlic powder. Brown the meat until caramelized.
  2. Lower the heat to medium and add diced onion, bell pepper, and celery; cook for about 5 minutes until softened. Stir in minced garlic and spices; cook for another minute.
  3. Incorporate frozen cauliflower rice and chicken stock; season with remaining salt and garlic powder. Mix well to loosen any bits from the pan.
  4. Cook until the cauliflower rice is tender and liquid evaporates; adjust seasoning as needed. Garnish with chopped parsley before serving.
