Ingredients

Scale
  • 2 large boneless, skinless chicken breasts (about 1 lb), cut into bite-sized pieces
  • 2 tbsp olive oil
  • 4 cloves garlic, minced
  • 2 cups broccoli florets
  • 3 cups fresh spinach leaves
  • 1/2 tsp salt (adjust to taste)
  • 1/4 tsp black pepper
  • 1/2 tsp red pepper flakes (optional, for a kick)
  • 1/4 cup chicken broth or water
  • 1 tbsp fresh lemon juice
  • 1/4 cup grated Parmesan cheese (optional, for garnish)
  • 2 tablespoons fresh parsley, finely chopped

Instructions

  1. Chop the chicken into bite-sized pieces and mince the garlic.
  2. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add chicken, season with salt and pepper, and sauté until golden brown (about 6-8 minutes). Remove from skillet.
  3. In the same skillet, add another tablespoon of olive oil and toss in broccoli florets; cook for about 3-4 minutes.
  4. Lower the heat to medium; add minced garlic and spinach to the skillet. Stir until spinach wilts (about 2 minutes).
  5. Return cooked chicken to the skillet; pour in chicken broth/water and stir to combine. Simmer for 2-3 minutes.
  6. Drizzle with lemon juice before serving; garnish with Parmesan cheese if desired.
