  • 1 tbsp olive oil
  • 1 garlic clove, minced
  • Juice of lemon
  • tsp paprika
  • tsp dried oregano
  • Salt & pepper to taste
  • 1 cup cooked brown or white rice
  • 1 tbsp chopped parsley
  • 1 tsp olive oil
  • Salt to taste
  • 2 large carrots, sliced into rounds
  • 1 tbsp olive oil
  • tsp honey or maple syrup
  • Salt & pepper to taste
  • tsp thyme or parsley
  • 3 tbsp Greek yogurt
  • 1 tbsp mayonnaise
  • tsp Dijon mustard
  • 1 garlic clove, minced
  • Salt & pepper to taste
  • Optional: pinch of smoked paprika

Instructions

  1. Marinate chicken: Combine olive oil, lemon juice, minced garlic, paprika, oregano, salt, and pepper in a bowl. Add chicken breasts and let marinate for at least 15 minutes.
  2. Grill the chicken: Preheat grill or skillet over medium-high heat. Cook chicken for 5-6 minutes on each side until fully cooked.
  3. Prepare rice: Cook rice according to package instructions. Mix in chopped parsley, olive oil, and a pinch of salt.
  4. Sauté carrots: In a skillet over medium heat, sauté sliced carrots in olive oil for 8-10 minutes until tender. Drizzle with honey or maple syrup and season with thyme.
  5. Make creamy sauce: In a small bowl, combine Greek yogurt, mayonnaise, Dijon mustard, minced garlic, salt, pepper, and optional smoked paprika. Mix until smooth.
  6. Assemble bowls: Layer herbed rice at the bottom of each bowl. Top with sliced grilled chicken and sautéed carrots. Drizzle with creamy sauce.
