  • 8 boneless, skinless chicken breasts
  • 2/3 cup balsamic vinegar
  • 1/4 cup Dijon mustard
  • 1/4 cup olive oil
  • 1 T dried parsley
  • 1 T dried shallots or onion (or 2 T minced fresh shallots or onion)
  • 1 T Spike seasoning
  • 1 tsp. dried thyme
  • 1 tsp. garlic powder
  • 1/2 tsp. coarse ground black pepper
  • 2 tablespoons fresh parsley, finely chopped

Instructions

  1. In a mixing bowl, whisk together balsamic vinegar, Dijon mustard, olive oil, and seasonings.
  2. Trim chicken breasts and make small slits to enhance marination.
  3. Place chicken in a Ziploc bag and pour marinade over it. Seal and refrigerate for at least 4 hours or overnight.
  4. Preheat grill to medium-high heat. Remove chicken from marinade and let it come to room temperature.
  5. Grill chicken for about 6-8 minutes per side until fully cooked and internal temperature reaches 165°F.
