Ingredients

  • 10 Balls fresh mozzarella (bocconcini, ciliegine, “cherry sized”)
  • 5 black olives (whole pitted, medium or large)
  • ½ Pound sliced chicken
  • 1 ½ Ounces balsamic glaze
  • 8 ½ Ounces sun dried tomatoes (packed in oil, julienne cut)
  • ¼ Cup olive oil
  • 8 basil leaves (fresh)
  • kosher or table salt (as needed)
  • flake salt (as needed)

Instructions

  1. In a mixing bowl, whisk together olive oil and chopped basil leaves. Season with kosher or table salt to taste.
  2. Take one ball of fresh mozzarella and place it on the serving platter.
  3. Cut each black olive in half to create 'pupils' and place on top of the mozzarella ball.
  4. Use thin slices of chicken to wrap around each mozzarella ball for added flavor.
  5. Drizzle balsamic glaze over each assembled eyeball for an extra layer of flavor.
  6. Scatter julienne-cut sun-dried tomatoes around the platter for decoration.
  7. Sprinkle flake salt lightly over the dish before serving.
