  1. Slice zucchinis into sticks (½ inch square, 2–3 inches long) and cut onion into half-inch pieces.
  2. Preheat a sauté pan or wok over medium-high heat. Add vegetable oil until it shimmers (30 seconds to 1 minute).
  3. Cook onions in the pan for about 2 minutes until softened.
  4. Add minced garlic and ginger, stirring for about 30 seconds until aromatic.
  5. Incorporate zucchini sticks; cook for an additional 4–5 minutes, stirring occasionally until lightly browned.
  6. Pour in soy sauce and sesame oil; season with salt, black pepper, and sesame seeds. Sauté for another minute until tender-crisp.
