  • 1 (15 ounce) can chickpeas, rinsed and drained
  • 2 mini cucumbers, chopped
  • 1 tablespoon red onion, chopped
  • 1 tablespoon fresh oregano, chopped
  • 1 tablespoon fresh parsley, chopped
  • 1/2 red bell pepper, chopped
  • 1 cup grape or cherry tomatoes, halved
  • 1/2 cup Kalamata olives
  • 3.5 ounces feta cheese
  • 2 tablespoons olive oil
  • 1/2 tablespoon lemon juice
  • 1 clove garlic, minced
  • Salt & pepper to taste

Instructions

  1. Rinse and drain chickpeas thoroughly.
  2. Chop cucumbers, red onion, red bell pepper, and halve the tomatoes; add to a mixing bowl with chickpeas.
  3. Chop fresh herbs (oregano and parsley) and combine with veggies.
  4. Add Kalamata olives and feta cheese; gently toss to blend.
  5. In a small bowl, whisk together olive oil, lemon juice, and minced garlic; drizzle over salad.
  6. Toss everything together until well combined; season with salt and pepper as desired.
