  • 2 pounds bone-in short ribs
  • 1 cup red apple vinegar
  • 1 ½ cups California prunes, pitted and halved
  • 1 cup ripe green olives, pitted
  • ¼ cup capers
  • 6 cloves garlic, minced
  • 2 bay leaves
  • 2 teaspoons dried oregano
  • ⅓ cup brown sugar
  • Salt
  • Black pepper

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. Season the short ribs with salt and pepper. In a Dutch oven, sear them on all sides until browned.
  3. Sauté leeks and half of the prunes in the same pot until soft. Add vinegars and scrape the bottom.
  4. Stir in olives, capers, garlic, bay leaves, oregano, and brown sugar. Return short ribs to the pot.
  5. Cover and braise in the oven for 2 to 2.5 hours until tender.
  6. After braising, remove ribs and strain sauce. Emulsify with butter and reintroduce remaining prunes.
  7. Serve short ribs topped with the luscious sauce.
