  • 1 tbsp extra-virgin olive oil
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 3/41 lb ground beef
  • 24 oz marinara sauce
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp kosher salt
  • 1/2 tsp freshly ground black pepper
  • 32 oz ricotta cheese
  • 2 eggs
  • 1 cup cooked spinach, drained and chopped
  • 1/4 cup mozzarella cheese
  • 1/4 cup shredded Parmesan
  • 1 box jumbo shells
  • 2 cups mozzarella cheese
  • Fresh parsley, for serving

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Boil jumbo shells according to package instructions until al dente, then drain.
  3. In a large skillet over medium heat, heat the olive oil until shimmering. Add the diced red and green bell peppers; sauté until soft. Incorporate the ground beef into the skillet, cooking until browned. Stir in marinara sauce and seasonings. Let simmer briefly before removing from heat.
  4. In a large mixing bowl, combine ricotta cheese, chopped spinach, eggs, mozzarella cheese, Parmesan cheese, garlic powder, and salt. Mix until everything is well incorporated.
  5. Carefully fill each cooked jumbo shell with a generous amount of the ricotta filling. Ensure they are packed well but do not overstuff.
  6. Spread some meat sauce in the bottom of a 13-inch baking dish. Place stuffed shells in a single layer on top of the sauce. Pour remaining meat sauce over all of the shells.
  7. Cover your baking dish with foil and bake at 350°F (175°C) for 20 minutes. Remove foil; add remaining mozzarella cheese on top. Increase oven temperature to 375°F (190°C) and bake for another 15 minutes or until golden brown.
  8. Once baked to perfection, garnish with fresh parsley before serving warm.
