  • 1 lb large shrimp, peeled and cleaned
  • 1/4 cup fish sauce
  • 1/4 cup fresh lime juice
  • 1 TBS chili paste (sambal oelek or sriracha)
  • 1 stalk lemongrass, bruised and sliced
  • 4 cups cooked rice
  • Fresh cilantro for garnish

Instructions

  1. Marinate shrimp by whisking together fish sauce, lime juice, sugar, chili paste, lemongrass, peppers, basil, oil, and garlic in a bowl. Coat shrimp well and refrigerate for 3-4 hours.
  2. Grill marinated shrimp over high heat until firm and opaque.
  3. In a wok or sauté pan, heat oil and sauté shallots, garlic, scallions, peppers, corn (optional), and mushrooms (optional) until fragrant. Add fish sauce and oyster sauce.
  4. Stir in cooked rice and half the basil; mix thoroughly. Just before serving, add remaining basil and squeeze lime over rice.
  5. Serve grilled shrimp atop fried rice garnished with fresh cilantro.
