  • 1 1/2 cups sliced strawberries
  • 2 cups cubed watermelon
  • 1/2 cup crumbled feta cheese (vegan or regular)
  • Fresh mint for garnish
  • Optional: 1 jalapeño, thinly sliced

Instructions

  1. Wash all produce thoroughly.
  2. Dice cucumbers into bite-sized pieces.
  3. Slice strawberries into rounds.
  4. Cube watermelon into similar sizes.
  5. In a bowl, combine honey or agave nectar, lime juice, lime zest, chopped mint, and a pinch of salt; whisk until blended.
  6. In a large mixing bowl, add prepared cucumber, strawberries, watermelon, and optional jalapeño.
  7. Pour dressing over the fruit mixture and toss gently to coat.
  8. Chill in the refrigerator for one hour before serving if desired. Just before serving, top with crumbled feta and additional mint.
