  • 4 medium zucchini
  • 1.5 lbs raw shrimp (peeled and deveined)
  • 2 tbsp olive oil
  • 4 garlic cloves (finely chopped)
  • 2 tbsp butter or ghee
  • Juice and zest of 1 lemon
  • 1/4 cup white apple vinegar (or chicken broth)
  • Pinch of red pepper flakes
  • Salt and pepper to taste
  • 1/4 cup chopped parsley (for garnish)

Instructions

  1. Spiralize zucchini into noodles and set aside.
  2. Heat olive oil in a large skillet over medium-high heat. Add shrimp, season with salt and pepper, and cook for about one minute on each side until pink.
  3. Add garlic to the skillet and sauté for another minute until fragrant.
  4. Remove shrimp from the skillet. In the same skillet, add butter, lemon juice, zest, vinegar, red pepper flakes, salt, and pepper; simmer for 2-3 minutes.
  5. Stir in parsley and zucchini noodles; cook for an additional 30 seconds to warm through before adding shrimp back into the pan.
  6. Toss everything together for about one minute until well combined.
